Singapore’s culinary landscape is about to be transformed as the much-anticipated Mandala Masters residency welcomes Indian Accent, a highly acclaimed restaurant hailing from New Delhi. Renowned for its innovative take on traditional Indian cuisine, Indian Accent, led by celebrated Chef Manish Mehrotra and Chef Shantanu Mehrotra, is set to captivate Singaporean palates at the prestigious Mandala Club until June 3rd 2023. This remarkable culinary collaboration, sponsored by Amaya Ventures, promises to introduce Singapore to the exquisite flavours and essence of India.

We have a penchant for extraordinary dining experiences, so when we were invited to a media-tasting event that showcased the brilliance of the Indian Accent, we had to go. On a memorable Monday evening, Chef Manish Mehrotra teamed up with the talented Chef Jason Tan from Euphoria to create a one-of-a-kind four-hands dinner. The anticipation was palpable as our lifestyle writer Rhuby stepped into the enchanting atmosphere of Indian Accent, ready to embark on a culinary adventure like no other.

The meticulously crafted menu showcased the chefs’ expertise in blending traditional Indian flavours with innovative techniques. Each dish presented a symphony of tastes and textures, leaving Rhuby in awe of the culinary artistry on display. The feast began with Smoked Eggplant with Maple Papdi, followed by Churan ka Karela with Puffed Rice Crackers and Aloo Tikki Chaat. The explosion of flavours was further enhanced with Puchka and Five Waters, a delightful combination that awakened the senses.

Continuing the gastronomic journey, the chefs delighted guests with dishes such as Morel, Gobindobhog, and Mushroom Payesh with Truffle, showcasing their mastery in infusing traditional Indian ingredients with contemporary flair. The Pulled Jackfruit Kofta with Green Mango Rice and Hundred Layer Paneer with Tamatar Chaman and Kohlrabi were culinary triumphs that seamlessly blended textures and flavours.

Indulging in the culinary symphony, Rhuby savoured the Doda Burfi Treacle Tart with Caramelized Milk Ice Cream, a harmonious fusion of Indian and Western influences that left a lasting impression. The Meetha Achaar Pork Spare Ribs with Green Mango Rice and Kanyakumari Crab Sago Pongal with Caviar pushed the boundaries of flavour combinations, showcasing the chefs’ ingenuity and creativity.

The experience reached its zenith with the Wagyu Pathar Kebab, Bone Marrow Nihari with Lily Buds, and the irresistible Butter Chicken Kulcha. The tender Wagyu beef, the rich bone marrow, and the delectable butter chicken encapsulated the essence of Indian Accent’s culinary brilliance.

Rhuby emerged from the four-hands dinner at Indian Accent feeling enlightened and invigorated. The collaboration between Chef Manish Mehrotra and Chef Jason Tan proved to be an unparalleled culinary experience, a harmonious symphony of flavours that elevated Indian cuisine to new heights.

For those seeking an extraordinary dining experience that pushes boundaries and stimulates the senses, Indian Accent’s residency at Mandala Masters is an absolute must. Embrace the opportunity to explore the unique culinary creations that bridge the gap between tradition and innovation.
