As Grand Hyatt Singapore turns 50 in 2021, gold signifies the hotel’s landmark milestone, and thus a call for a grand celebration. Gottfried Schuetzenberger, the hotel’s Executive Chef who joined Grand Hyatt Singapore on 1 March 1983, will present two limited-time-only anniversary menus (Lunch at S$50++ and Dinner from S$68++) from now till 30 November 2021 at mezza9 and Pete’s Place. The menus pay homage to 50 years of culinary excellence at Grand Hyatt Singapore with a collection of the most beloved dishes from years past and present that were once served up at the hotel’s former dining concepts, Nutmegs, Hugo’s and Branningan’s.
Nutmegs, once located on the mezzanine level of Grand Hyatt Singapore in the 80s, was a lounge specialising in seafood and steak, and offered its signature Old Days Crab Bisque with a Cognac Cream in an Art Deco-inspired setting with live jazz performances by local and international acts. Hugo’s was an upscale restaurant in the 80s that offered a fine dining experience amidst an opulent atmosphere, with the Steak au Poivre (a black pepper crusted US tenderloin) and the Cherry Jubilee (a cherry flambée and rum baba dessert) as two of its signature items. Brannigan’s, which was known as a “fun pub” in the 90s, offered live band and DJ sets in an atmosphere where “every pitcher tells a story”.

For the special 50th anniversary menu at mezza9, experience Chef Gottfried’s tribute to Grand Hyatt Singapore’s grand years of bold cuisine with delectable dishes such as The Old Days Crab Bisque with Cognac Cream, Steak Au Poivre Black Pepper Crusted US Tenderloin with French Beans and Nutmeg Mashed Potatoes, and Sticky Date Pudding with Clotted Cream.
Over at Pete’s Place, enjoy culinary top-hits such as Beef Carpaccio with Rocket, Shaved Parmesan Cheese, Balsamic and Lemon, Cioppino Alla Pete’s Place (a delightful blend of fresh, sustainable seafood including lobsters, prawns, and clams alongside shell-shaped pasta in a flavourful, hearty stew) and Rum Baba with Cherry Jubilee, Cherry Flambee and Vanilla Bean Ice Cream.
