This Dragon Boat Festival, Shang Palace at Shangri-La Hotel, Singapore presents a selection of rice dumplings that convey blessings of health and enjoyment, perfect for gifting or indulging with loved ones. The rice dumplings are available for self-pick-up and delivery from now till 25 June.

While the Dragon Boat Festival has been a long-standing festival, it brings the message of new hope and vitality.

Shang Palace’s rice dumplings embody this balance of old and new with its mix of tradition and innovation through popular signatures and new creations.

The selection comprises sweet and savoury rice dumplings that are laboriously handcrafted by the Shang Palace chefs, featuring a variety of nourishing Chinese ingredients, wholesome grains, and luxurious fillings that incorporate Asian and Western delicacies.

Helmed by Executive Chef Mok Kit Keung, who led Shang Palace Kowloon to achieve two Michelin stars, the Shang Palace culinary team has curated flavours that meet the needs of different diners – those looking to indulge, the health-conscious, the local palate, those seeking vegetarian options, and the younger consumer who may seek modern renditions of the rice dumpling.

New creations

This year, Shang Palace introduces a decadent take on the time-honoured rice dumpling, with the new Black Truffle and Organic French Chicken with Buddha Jumps Over the Wall (黑松露有机珍 珠鸡佛跳墙粽) dumpling. An expression of Chef Mok’s philosophy of introducing contemporary influences to traditional techniques, this luxurious dumpling is skillfully put together with 20 key Asian and Western ingredients. Incorporating delicacies such as four-head abalone, foie gras, sea cucumber, fish maw, dried scallop, Parma ham, black truffle, morel mushroom, wolfberries, organic quinoa and more, this new creation offers a balance of indulgent and healthful elements.

This novel rice dumpling is offered as part of Shangri-La’s Master Series, which features gourmet creations that have been specially conceptualised by master chefs from the hotel group’s properties in the region. It is presented in a specially designed hexagonal box with oriental motifs and illustrated animal totems reminiscent of the cultural history and significance of the festival.

Bursting with umami from its sweet and savoury flavours is the innovative Sweetened Purple Glutinous Rice Dumpling with Custard (紫米奶皇流 心粽). Encased in a mix of purple and white glutinous rice is a lava custard made with salted egg yolk and wrapped with a light wafer paper. The lava custard oozes when the dumpling is cut and balances the flavours when it mixes with the sweet rice, forming a photo-worthy and delicious treat for the modern consumer.

Paying homage to the age-old occasion, the team celebrates local heritage by introducing an authentic Traditional Nyonya Rice Dumpling (风味娘惹粽). Complete with a tinge of blue from butterfly pea flower, which is iconic of a traditional Nyonya rice dumpling, Shang Palace’s rendition stays true to the recipe of using glutinous rice, minced pork, salted egg yolk, chestnut, diced black mushroom and the essential sweetened winter melon to appeal to the local palate and purists.

Popular signatures and vegetarian options

Not forgetting Shang Palace’s popular creations, the selection of rice dumplings includes the Shang Palace Signature Barbecued Pork Rice Dumpling with Yunnan Ham and Conpoy (香宫金华火 腿瑶柱裹蒸粽), a well-liked yearly flavour. Glutinous rice wraps a filling of Yunnan ham, a famous savoury dry-cured meat, along with mushroom, roasted duck, pork belly, dried scallops, chestnut, salted egg yolk and more.

The Eight Treasures Rice Dumpling with Mixed Grain Rice and Organic Quinoa (有机八宝五谷藜麦粽) returns to delight as a tasty vegetarian option after it was well-received last year. Featuring wholesome mixed grains, peanuts and nutritious ingredients such as sliced red dates, wolfberries, cordyceps flower and organic quinoa wrapped in glutinous rice and fragrant bamboo leaves, this creation delivers on scrumptious flavours and textures for a healthy indulgence.

A sweet vegetarian option, the Sweetened Lotus Seed Paste Rice Dumpling (莲蓉枧水粽) also appeals to those who prefer classic dumplings. The seemingly simple and unadorned dumpling

features sweet lotus seed paste that has been boiled for hours wrapped in soft glutinous rice. The dumpling is made with vegetable oil and not peanut oil, as a thoughtful consideration for diners with allergies.

For self-collection, orders for frozen dumplings must be made at least 30 minutes in advance. Orders for steamed ready-to-eat dumplings must be made at least 1 day in advance. The collection venue from now till 1 June 2020 will be at Shophouse by Shangri-La, located in the hotel’s Tower Wing lobby. The collection venue from 2 June to 25 June 2020 will be at Shang Palace. Golden Circle members can enjoy 25% savings for self-pickup orders (excluding Black Truffle and French Organic Chicken with Buddha Jumps Over the Wall and Gift Set).

Shangri-La Hotel, Singapore will also offer an island-wide delivery service from 18 May to 25 June 2020. Orders for both frozen and steamed ready-to-eat dumplings must be made at least 1 day in advance for delivery. A flat delivery fee of $20 per location is applicable. Enjoy complimentary delivery with a minimum spend of $150.

For orders via Grabfood, foodpanda, or Deliveroo, only frozen dumplings will be delivered, subject to availability from now till 25 June 2020.
