To celebrate International Tequila Day this year, tequila lovers in Singapore were treated to an unforgettable evening at TOMATILLO Mexican Food & Bar. The International Tequila Day Tequila Tasting Dinner, jointly organised by East West Management & Marketing and TOMATILLO, showcased the refined world of Don Ramón- a premium tequila brand from Jalisco, Mexico through an expertly curated menu and guided tasting.
The one-night-only experience was crafted by TOMATILLO’s culinary power couple, Chefs Daniel and Tamara Chavez. Guests were invited to savour the bold flavours of Jalisco while discovering the artisanal craftsmanship behind Don Ramón’s 100% Blue Weber agave tequilas. The event reflected the shared passion of both organisers for Mexican heritage, authentic flavours, and tequila education.

A guided journey through Don Ramón’s expressions
The evening began with a welcome margarita served alongside nachos and salsa, setting the tone for the vibrant flavours to come. Each course was paired with a distinct Don Ramón tequila expression, offering a guided exploration of its unique profiles.
First came the Tostada Puerto Vallarta- lime-marinated shrimp with tomato, red onion, coriander, and jalapeños on a crispy corn tostada, paired with Don Ramón Tequila Blanco. This unaged tequila, crystal clear and fresh, highlighted pure agave sweetness with subtle herbal notes, making it a perfect match for light seafood.
Next, the Mini Torta Ahogada delivered comforting richness with pork carnitas bathed in spicy tomato-chile sauce, paired with Don Ramón Tequila Reposado. Aged for six months in French oak barrels, the Reposado offered a smooth balance of vanilla, caramel, and citrus, its wine-like nuances enhancing the dish’s depth.
The main course, Beef Birria, brought slow-braised beef in a blend of dried chillies, spices, and avocado leaves, served with consommé and tortillas. It was paired with Don Ramón Tequila Añejo, aged 12 to 18 months for a velvety, full-bodied character layered with dark chocolate, cinnamon, and roasted agave.
Dessert was a traditional Jericalla, a Guadalajara favourite, featuring creamy cinnamon and vanilla custard with almond crumble and agave reduction. A coffee tequila rounded off the evening on a warm, indulgent note.
