With most bubble tea shops remaining closed in the first phase of Singapore’s re-opening after the circuit breaker, Shangri-La Hotel, Singapore’s team of pastry chefs has created our own rendition of the coveted beverage in the form of a Bubble Tea Lava Cake.
Layers of Earl Grey Japanese sponge cake sandwich 64% Manjari chocolate-infused tea ganache to form the familiar fragrant flavours of milk tea. The cake is topped generously with mascarpone cheese chantilly cream which emulates the smooth mouthfeel of the beverage. Evidently, a copious amount of chewy gula melaka pearls complete the bubble tea-inspired delight.
The chewy texture of the pearls evokes a sense of familiarity as it brings to mind other comforting local delights such as kuehs. Tea with milk is also a combination that is close to Singaporeans’ hearts and palates with the prevalence of our local kopitiam beverages such as Teh. Add to that the heady scent of Earl Grey with sunny notes of bergamot that permeates the cake, the Bubble Tea Lava Cake brings together the right textures and flavours to fill the void of bubble tea lovers in these special times.
As its name suggests, the cake takes indulging in bubble tea up a notch with the luscious mascarpone cheese chantilly cream which overflows from the top of the cake and drizzles down the sides when the protective sheet around the cake is removed, promising a photo-worthy and delicious experience. Each cake comes with an additional serving of mascarpone cheese chantilly cream for you to take the dessert over the top.
